4oz fresh lemon juice
4oz thyme simple syrup
12oz Julian Apple Cider
8oz aged rum (I used Appleton 12yr Jamaican Rum)
4oz filtered water.
10 dashes angostura bitters
6 dashes Regans orange bitters
Garnished with a sprig of thyme and a thin apple slice.
To make thyme simple syrup, combine one cup of of evaporated cane sugar and filtered water each in a saucepan. Heat on a stovetop and bring to a light boil. Turn heat down to a simmer and add a few sprigs of thyme, about 10 will do and let simmer for 5 minutes. Strain out all solids and leave liquid aside to cool before using.
Add all ingredients to a punch bowl and serve over ice.
